During a recent visit to the Philippines in July for the opening of % Arabica’s newest branch at Mitsukoshi BGC in Taguig, these global baristas shared their genuine admiration for the dedication of Filipino baristas in making quality coffee. “I can see their patience in perfecting their craft. I also appreciate that they’re very knowledgeable when it comes to coffee and yet they’re still willing to learn new things no matter how old they are, regardless of their position”, Chua said.
Lee concurred with Chua’s sentiments, highlighting the pivotal role of passion in becoming a world-class barista, “If you have passion, you can do everything.” Lee also underlined the integration of the Japanese philosophy of ‘Kaizen,’ emphasizing continuous improvement in their approach, “Like our founder would always say: Kaizen your daily. In everything you do, apply the concept of Kaizen. For example, you’re doing your 1000th cup but it’s the customer’s first cup. If your 1000th cup is not as good as your other cups, the customer trying it for the first time will not come back. So improve and better yourself daily so you can achieve anything”, Lee said.
