Healthy dishes for a healthy you

French cuisine may sound intimidating, but Salmon en Papillote is deceptively easy and fast to prepare. Salmon is one of the most nutritious foods in the market, rich in omega-3 fatty acids and B vitamins.

Start by preheating the oven to 375F. As the oven heats up, portion a 1.5lb cut of salmon into 4 equal pieces. Cut 4 large ovals out of parchment paper. Thinly slice a small zucchini, a small head of fennel, and 1 lemon. On one half of the oval, create a bed with the sliced zucchini, fennel, and lemon and plaice the portioned salmon on top. Season with salt, pepper, and dill, and top with fennel fronds and a drizzle of olive oil. Wrap the salmon by folding over the other half and crimping the edges to create a seal. Repeat with the remaining 3 pieces and place on a baking sheet. Cook on the center rack for 15 minutes and open with a fork to let the steam before serving.

Start by preheating the oven to 400F. Afterwards, peel and cut 4 medium sweet potatoes into 1/4-inch matchsticks. Place the sweet potatoes in a single layer onto the prepared baking sheet. Add olive oil and gently toss to combine; season with salt and pepper to taste. Place into oven and bake for 35-40 minutes, or until golden and crisp, tossing occasionally. While the potatoes are cooking finely mince garlic using a garlic press and grate 1/2 cup of Parmesan cheese. Once the potatoes are done toss them in the garlic and cheese until well-coated and serve.

There’s nothing like a warm soup to stay healthy this cold and flu season. You can skip the store-bought or instant soup by making this soup dish full of immunity-boosting, anti-inflammatory, and detoxifying ingredients like assorted vegetables and a medley of spices.

Start by prepping your vegetables. Dice up one yellow onion and one large sweet potato.

Mince 6 cloves of garlic and grate enough ginger for 1/2 teaspoon. Drain and rinse 1 15oz can of chickpeas and 1 cup of red lentils. Meanwhile, destem 1/2 cup of kale and tear the leaves into 1-inch pieces.

In a large pot or dutch oven, sweat the onions in olive oil for a few minutes. Add the ginger and garlic and cook until fragrant. Add 1 teaspoon of turmeric and 1/2 teaspoon paprika and continue cooking until spices bloom. Add 1 tablespoon of lemon juice, the sweet potatoes, chickpeas, red lentils, and vegetable broth and bring to a boil. Simmer until sweet potatoes are soft then add the kale and cook for a few minutes until the kale has softened. Season to taste with salt and serve.
