The start of a new cycle in the Chinese calendar welcomes the auspicious year of the Wood Dragon. Marco Polo joins the festivities with a lavish special menu prepared by Chinese executive chef Waai Hoi Yeung at the 5-star hotel’s award-winning Cantonese restaurant Lung Hin.
From February 05 to 11, his culinary brilliance shines in eight curated a la carte masterpieces, and a gustatory collection of nine flavorful courses in one lavish set menu. Diners will also be able to chart their course with a live Feng Shui forecast by Master Chau Kam Shing over a grand luncheon on Saturday, February 10.

The star of the special Chinese New Year menu is the Yusheng or Prosperity Toss. Here, slivers of buttery abalone, fresh salmon jellyfish, and an assortment of vegetables, both raw and pickled, are seasoned with a rich plum sauce combined with soy sauce and sesame oil. All the ingredients are then tossed high in the air by diners as they shout out their wishes, with the belief that a higher toss will attract more luck for the year.

This is then followed by a warming bowl of Pork Soup with its rich flavor intensified by the use of Dried Oysters and Sea Moss. The Wok-Fried Prawns and Sea Conch with XO sauce is spicy and flavorful, further whetting the appetite and opening up the palate for the main dishes.

The Braised Pork Knuckle and Sea Moss with Garden Greens will be a familiar sight for any lover of Cantonese cuisine. The pork is braised to fork-tender softness, with the thick sauce pairing well with the meat’s inherent sweetness.

The Hong Kong-Style Deep Fried Flower Red Crab with Garlic and Chili might be more difficult to eat due to the crab’s carapace but easing out the flesh from the crevices, diners are in for a flavorful treat as each bite explodes with flavor.

Fill up the stomach with Fried Rice with Taro and Chinese Sausage or with Braised E-Fu Noodles with Assorted Mushrooms in Abalone Sauce. Finally, end the meal with a cup of Sweetened Ginger with dumplings while nibbling on Lung Hin’s signature Nian Gao made out of ginger, red date, and muscovado sugar.
