Summer treats at Gilarmi

Discovery Primea’s Gilarmi Lounge made a name for itself by being the first establishment to offer a gin library. This made it a hotspot for gin and tonic lovers who would enjoy a glass or two after the day’s work.

With more guests coming back to the premises as quarantine restrictions eased, Gilarmi Lounge welcomes the better days ahead with a special treat for cocktail lovers — the lounge’s very own aged Negroni.

The Negroni is a classic Italian cocktail and widely imbibed as an aperitif. Composed of equal parts sweet vermouth, gin, and Campari, the bittersweet cocktail saw a meteoric rise in popularity during the pandemic years as drinkers wanted to make simple cocktails at home.

Gilarmi Lounge takes the classic cocktail and ages it in charred American oak barrels for 30 days. The aging period allows the ingredients to better blend together, mellowing out the sharper flavors. It also picks up some notes of vanilla and oak from the barrel, creating a more multi-dimensional drink that is a treat to sip on. A serving of the Barrel-aged Negroni can be had for P400 nett per glass.

Gilarmi Lounge’s Burger Library is also a product of the pandemic. “The times needed comfort food. You did not crave foie gras, wine-sherry reductions, etc. You wanted comfort food to make you feel at home. Make you feel that things would be ok. This was how the Burger Library was born,” Discovery Primea David Pardo de Ayala shared.

Since it was launched in 2020, the Burger Library became known for its high-quality burgers, all of which were conceptualized and prepared by Discovery Primea’s Executive Chef Luis Chikiamco and his culinary team.

It has added new burgers on the list in order to offer new plays on textures and flavors.

The Le Bistro 2.0 is an update to an existing burger. This cheesier, tastier version of its predecessor features stronger flavors and ingredients such as mozzarella, Parmesan, Emmental cheese and caramelized onion.

The Italian Job aims to be an equally thrilling treat on its own. The addition of minced prosciutto in the patty results in a more complex flavor. This is paired with the mozzarella cheese and tomato fondue for a trifecta of Italian flavors.

For those who want a meaty meal without the meat, The Mushroom is the go-to order. It features a crispy mushroom katsu using a variety of minced mushrooms which is shaped into a patty before being breaded and deep-fried. It is then topped with a cabbage slaw, and “Bull-Dog” sauce.

Each burger is served with a side of freshly cooked homemade chips, and promises an easy, no-frills and enjoyable dining experience. The burgers are priced from PHP 295++ to PHP 495++

Lastly, Gilarmi Lounge announces a special partnership with Sebastian’s Ice Cream. Both companies are locally owned and operated, and as such, the partnership aims to highlight local tastes and flair.
