New Korean fried chicken store sure to satisfy

The new mom-and-pop chicken place, The Good Chicken, offers one of the trendy and popular Korean dishes, fried chicken, smothered in different sauces after it is deep-fried.

Michael Lunar, operations manager of The Good Chicken, the brand under Herald Foods Corp. owned by president Fernando Nino Raymund Christian Canon and vice president Kristian Angelo Gadia, said they want to bring out everything that is good — bone-in portions of chicken, dipped in batter and fried. The chicken can be downed with a beverage of choice or taken as a meal.

The new spot offers different flavors. Lemon Glazed has a sweet and tangy citrus glaze with a perfect amount of citrusy flavor in every bite. With Soy Garlic, the salty soy is the first note a diner can get, followed by mellow garlic undertones, and even a slight sweetness.

The White Cheddar has a salty and sweet cheese seasoning that kids will surely love.

There is also the Sweet Corn flavor from the fresh-shucked corn, as well as deliciously tender fried chicken coated with rich and flavorful Salted Egg. The Asian Mix features the region’s vibrant flavors with a mild kick.

Apart from these, there are premium flavors, too. The Yangnyeom is a sweet and spicy sauce made with gochujang, garlic, and other spices. The Truffle and Cheese Cream has a creamy melted parmesan cheese with Italian white truffle oil. The Soy-Miso Truffle offers succulent pieces of chicken slathered with umami packed sauce.

As for the Bourbon Glaze flavor, fried chicken lovers can taste the goodness of teriyaki with a hint of bourbon whisky. Honey Sriracha is a spicy and sweet velvety sauce made with OG sriracha and butter. Lastly, the Root Beer Glaze is also a must try.

“It is our own recipe,” Lunar said. “We have our own chef who made all of this and the raw materials used for this are premium.” Since it is Korean-inspired, the store has utilized the double process procedure to keep that original Korean fried chicken crisp.

To make it still Korean, “we did research and are backed by chefs. Everybody has a good culinary background,” he added.

According to chef Ralphael de Jesus, “while the procedure of frying the chicken is arduous, the outcome is best.”

Although the store is open for dining, it can accept a very few customers as the focus is pick-up and delivery due to the ongoing crisis.

The approximately 68-meter store was opened at the 8001 City Place Building, J. Abad Santos, corner Lopez Jaena in San Juan City “because the area has a lot of traffic and the openness of the market on different food concepts,” Lunar said. “If you go around, there are big opportunities here.”

He mentioned that down the pipeline, “we will probably have our own delivery platform.” In the meantime, “we have to look at it numbers wise,” he noted.
