SAGE

I BELIEVE that being laid back and being able to enjoy pizza delivery and a cold beer while watching movies at home with your significant other is as important as dressing up for each other and going somewhere nice for date night once in a while. So a few weekends ago, my fiancé and I decided to do just that. 
 
We checked out Art Fair Philippines and made a reservation for dinner at Sage, the new restaurant and bar in Makati Shangrila for after. We explored the fair for a few hours, we walked around and chatted, appreciating each piece, till we felt our tummies begin to grumble and decided to walk on over to the Shangri-La Hotel Makati conveniently located right next door. 
 
The interiors of Sage were very comfortable, modern with a cozy and luxurious feel. Jazz music was being played in the background at just the right level, and lighting that was perfectly dimmed. We entered through the bar entrance which was located on the ground floor, and were led up beautiful staircase up to the second floor where the restaurant is located. 
 
I was impressed upon arrival. The waiters and staff at Sage were very polite and charismatic, they led us to our table and presented us with the menu stating all the specialties. Good service makes a dining experience so much more worthwhile. 
 
To start with we had the Foie Gras Surprise on Quinoa Salad and the King Scallop Ceviche, Cauliflower Puree with Aquitaine caviar and beetroot sponge cake. The foie gras surprise, was a surprise indeed! A big black ball sitting on top of quinoa with lettuce leave sticking out of it was placed in front of me. I broke into the black sphere of foie gras - which of course was good because it is pretty difficult to go wrong with such a wonderful ingredient. However, I could not figure out what the black jelly that encased the foie gras was made out of - it reminded me of squid ink and vegetable broth base. I was told truffles were involved, it is a shame I could not taste it though. I was thrown off by the quinoa salad beneath it, I was not too fond of the texture of the quinoa with the foie gras - it definitely did not bring out the best in the rich creamy flavor and texture of the foie gras. This was not my favorite dish, but I did enjoy the King Scallop ceviche. The scallops were fresh, sweet and silky! A light a refreshing appetizer to jump start the evening. 
 
For our main courses we had the King Prawn Fricassee with Stir Fried Vegetables, Fragranced with Seasonal Herbs, and the Pan Fried US Duck Breast with Caramelized Fennel, Almond, Navel Orange Confit, Caraway Seeds and Fennel Puree (prepared with duck supreme des landed franchises). Both of these mains were excellent! The prawn fricassee was served on top of perfectly al dente rice with bean sprouts and carrots. The sauce was so delicious! It tasted like a lobster bisque with a hint of spice that tingled our mouths but did not burn. 
 
The duck was so succulent! Thick cuts of it were sliced and cooked so it was browned on the outside but still pink on the inside. It was incredible! If I didn’t know any better I could have confused it with a steak!
 
I loved how it was marinated with the perfect amount of citrus from the navel orange confit. Toasted almonds and caramelized fennel with the fennel pureed tied everything together. This was absolutely divine! 
 
For dessert we had the passion fruit soup mango and pineapple ravioli coconut espuma, and milk chocolate muille fuille banana and calamansi parfait. The milk chocolate muille fuille with banana and calamansi parfait was interesting and unique. It was nice to enjoy a dessert with lots of different flavors and textures. The passion fruit soup with mango and pineapple ravioli and coconut espuma won me over though. It was the perfect palate cleanser after the meal. Tart and refreshing with a hint of creaminess from the coconut espuma. It woke up my tastebuds and made me feel like I was in a tropical paradise. This is something that I will crave on a hot summers day! 
 
Overall, my fiancé and I were very satisfied with our first experience at Sage and we will be back again. We enjoyed our delicious meal in the luxurious setting, and appreciated the world renowned service of the Shangri-La Hotel. This is a great spot to go for a date. After dinner be sure to go downstairs to enjoy some wine and cocktails before calling it a night.
