RESTAURANT Verbena proudly presents a well-curated 3-course Holiday Set Menu that perfectly captures the joy and warmth of Christmas through flavor.

An appetizing Soft Shell Crab Tempura served with Petite Salad, and Citrus and Tobiko Vinaigrette makes for the perfect starter—light yet flavorful, preparing the appetite for a hefty entrée. A choice of Turkey Roulade with Purple Potato Mousseline, Aromatic Vegetables, and Natural Jus, or Grilled US Angus Striploin with Confit Marble Potatoes, Roasted Oyster Mushrooms, and Red Wine Sauce, are primed to emulate the extravagance of the holidays with these main courses’ remarkable taste.

Dessert ends this gastronomical journey with a bang—a choice of Orange Chocolate Tart or Quesode Bola Cheesecake that will satisfy one’s sweet tooth with hints of tangy or salty flavors playing in the background.

The Holiday set menu is the brainchild of Executive Chef Jayjay Sycip, Restaurant Verbena’s new Executive Chef. Leading the team behind Restaurant Verbena’s delectable offerings, Chef Jayjay Sycip rounds all knowledge and experience up, to stimulate growth towards sustainable, hearty dishes and certainly, satisfy appetites.

An expert in the field, Chef Jayjay covered various culinary aspects including menu development, kitchen workflow, management, research, and strategy. He is proficient in Classical French, Mediterranean, American, and Asian Cuisines, around which he builds concepts and develops them all the way through operations. Chef Jayjay has worked as a kitchen, chef, and recipe consultant for several hotels and restaurants since 2008, and even co-produced and co-hosted a travel cooking1 show for a few years.

As he takes on the new executive chef role at Restaurant Verbena, Chef Jayjay looks into sustainability—sourcing fresh, quality ingredients from the local farms in Tagaytay. His direction is headed towards knowing where his food is coming from, as well as supporting the local farmers of Tagaytay. With over a decade’s experience, Chef Jayjay is eager to set on a new journey of teaching, learning, and a good deal of cooking at Restaurant Verbena of Discovery Country Suites Tagaytay.
